On the nose, the Goliath Cockatoo is exceptionally fresh and aromatic. Yellow fruits such as apricot and quince meet floral elderflower and intense vanilla. Bourbon cask maturation adds soft woody nuances and further depth to the vibrant fruit character.
The palate is smooth, subtly sweet and exceptionally elegant. The yellow fruit aromas return clearly, combining with vanilla, delicate spice and a silky, almost oily texture. Every component is beautifully balanced, giving this Colombian rum remarkable finesse.
