Don Papa Gayuma is a strictly limited special release inspired by the mystical rituals of Philippine shamans at the foot of Mount Kanlaon. “Gayuma” translates roughly to “love potion.” This molasses-based rum undergoes a unique triple cask maturation: after three years in ex-bourbon American oak barrels, it is finished for six months in heavily toasted ex-Rioja wine casks, followed by a final three-month refinement in smoky Islay whisky casks.
This special release breaks away from the typically sweet Don Papa profile, offering a fascinating and polarizing balance between smoky Islay notes and the tropical fruits of Negros Island.
- Nose: A distinct yet elegant smokiness with light peat, combined with classic Don Papa aromas of orange peel and tropical fruits such as calamansi (a Philippine citrus fruit). Hints of vanilla and a touch of mint are also present.
- Palate: Full-bodied and rich, with a pronounced smoky character from the Islay casks. This is complemented by soft vanilla, citrus fruits, dark cocoa, and a hint of clove.
- Finish: Long-lasting, pleasantly smoky and spicy. The lingering sweetness of the molasses rum is accompanied by spice and smoky oak notes, resulting in a balanced yet bold finish.
